Head Butcher

Sheppy’s House of Cider and Fine Food

Sheppy’s House of Cider was developed in 2017 as a visitor attraction including farm shop, cafe, restaurant and bar.  It is establishing its position as Somerset’s premier cider destination, serving tourists and locals alike with a first class experience in all public areas, based on a high level of customer care and attention to detail.

The facility is open seven days a week including Bank Holidays.

Closed:  Christmas Day, Boxing Day, New Year’s Day.

This post is for 40 hours per week spread over 5 days on a rota basis, including weekends and Bank Holidays. It is ideal for an experienced butcher with an understanding of traditional breeds and traditional butchery style, who has enthusiasm to build up the department who can work alone with occasional support from shop staff at busy times.

We are looking for:

Excellent inter-personal skills

High standards of presentation personally and in all areas of work

A delightful manner with customers and colleagues alike

Ideas and enthusiasm

A passion for butchery and building up the butchery department based on home-bred lamb and Longhorn beef

The successful applicant will have:

Considerable (at least 3 years) butchery experience across all standard carcasses

The ability to manage a small butchery single handedly

A flair for counter presentation

To manage his/her time effectively

To liaise with the Head Chef to manage and minimise waste

High standards in everything (cleanliness, records, presentation etc)

Enthusiasm to grow and develop a good loyal customer base

Ability and willingness to exceed customer expectations

To make every effort to find trade accounts

To effectively negotiate prices with suppliers and customers

A full clean driving licence

To meet and manage all legally or internally required procedures

A good understanding of costings and margin calculations

Two good quality references relating to previous employment, attendance, honesty and personality

The post requires you to:

Put customers first and make yourself part of their memorable visit to Sheppy’s Cider

Encourage your colleagues by example to maximise the customer experience and sales

Observe and implement good health and safety and security practices

Work tidily and cleanly behind the scenes and when in public view

Be responsible for complying with COSHH, health and safety and HACCP regulations in the butchery

Ensure the butchery is adequately stocked, while avoiding waste

Ensure counter displays are always attractive and interesting

Be creative with butchery products to maximise seasonal sales opportunities

Liaise with the livestock manager about when a bullock is needed/ready for the butchery

Ensure that good cleanliness and hygiene are maintained in the butchery, with appropriate record keeping

Check in all deliveries, price check them and match them with orders

Be responsible for all ordering, pricing and managing margins

Work co-operatively with the House of Cider Manager, Chef and Farmshop Manager on a daily basis.

Work co-operatively with colleagues across all departments in the management and planning of special events

Carry out any other tasks within your ability as requested by senior staff

Support and training will be given in all areas required.

The post-holder will report to the House of Cider Manager.
