Gently muddle mint leaves in the lime juice, rum and sugar syrup. Fill the glass with cubed (or crushed) ice and pour over Dabinett Apple Cider. Stir to mix and garnish with a mint sprig
Fill a handled ½ pint glass with cubed ice and pour over all ingredients except ginger beer. Stir well to mix. Gently layer the ginger beer on top. No garnish needed.

This cocktail was created by a mixologist for the Quality Drink Awards in 2014, where Sheppy’s Vintage Reserve won top place in the cider category. Despite the other strong alcoholic ingredients, this cleverly crafted cocktail maintains such a good taste of cider that it even impressed David Sheppy!
